Charred tomato salsa

Amp up your favorite garden salsa with this simple and easy version. Charring the tomatoes before adding them to the rest of the easy, fresh ingredients gives this salsa a unique smoky twist! Give it a try and you’ll be charring all of the things!

This salsa recipe uses only a few ingredients and whips up lickity split. Charring the tomatoes only takes an extra few minutes but makes all the difference in the world in flavor.

As with all salsa recipes, this recipes i easily customizable and adaptable. Swap out your favorite onions, add in peppers, skip the cilantro, even change up the kind of tomatoes you use…salsa should be a recipe that everyone tries making for themselves at least once. It is easy and forgiveable.

I use whatever tomatoes I have on hand to make salsa. In my Imperfect Foods box (have you tried them yet? So good!—love using them!) I often have an abundance of Roma tomatoes.

Whatever kind of tomato you choose be sure to choose a variety that won’t slip through the grate on your grill.

I’m using shallot in my salsa because, like the Roma tomatoes, I had an abundance of them in my Imperfect Foods box. However, garlic works just as well!

When you char your tomatoes and onions you want to have the grill screaming hot. You’ll only need to char each side for a minute or two and they will be done and ready to use.

Tip: spray your grill grate (when cold) with Pam to help keep the tomatoes from sticking to them.

Mmmm…I mean, throw a bit of balsamic and salt on that and totally skip the salsa. So good!

But NO, the salsa is worth it. I promise.

Pull out the food processor and throw that goodness in…

Give it a good pulse or two and throw in some fresh cilantro…

A good squirt of lime, salt, and pepper. Totally done! If you prefer, throw in a bit of cayenne pepper, chipotle, or even a sprinkle of sugar (no really…this is usually a winning ingredient!)

You’ll notice that I didn’t add any peppers to mine. My children don’t like peppers and when they are going to be home I don’t add them. However, I usually add a couple of jalapeno’s to the recipe. Heck…I add them to the charring on the grill! In fact, I’ve included them in the recipe.

Charred Tomato Salsa

A smoky salsa that whips up easily and fast. Fantastic version of your classic favorite garden salsa using charred tomatoes on the grill.

Ingredients
 

  • 1 pound Roma tomatoes about 8-10 small
  • 2 lg white onions, halved
  • 2 shallots, halved
  • 2 jalapeno's, seeds removed
  • 1 bunch fresh cilantro about 1 cup (before being chopped)
  • 1 tablespoon salt add more, to taste
  • 2 limes

Instructions

  • Spray Pam on your grill grate and turn the grill to the highest heat available.
  • Slice the tomatoes, shallots, and jalapenos in half lengthwise.
  • Remove the root from the onion and slice it in half.
  • Carefully place the tomatoes, shallots, jalapenos, and onions on the hot grill. Close the grill.
  • After a couple of minutes open the grill and flip the veggies over.
  • Remove to a bowl or platter when they are well charred.
  • Add the charred veggies to your food processor and pulse a couple of times.
  • Add the cilantro, salt, and juice from the limes.
  • Pulse until blended as well as you like.
  • Add additional lime and salt as you prefer.
  • Serve immediately or store in the fridge until ready to serve.
