Pepperoni Pizza Bites (freezer-friendly!)

Make up a batch of these pizza bites in under 30 minutes. A great way to feed hungry kids in a fast hurry! Heck, store a batch in the freezer for easy re-heating. Made with Rhodes pizza dough, shredded cheese, pizza sauce, and mini pepperoni…these pizza bites couldn’t be easier or faster to make.

As I wrote up this recipe and instructions my 17 year old son came to tattle on his father for taking the last of the pizza bites that were in the freezer. These truly are easy and a favorite quick snack. Try them soon!

Rhodes Pizza dough (have you tried it yet ?!?) thaws in the same way as their bread dough…out on the counter for 4 hours is perfect. Roll it out and make your pizza. The dough is light, easy to roll, and tastes fantastic. I’ll be keeping a bag of Rhodes Pizza dough in the freezer always! So handy and tasty!

NOte: if you can’t find Rhodes Pizza Dough in your area their Frozen White Bread Dough works fantastic for pizza dough. I’ve used it for my Cast Iron Deep Dish pizza —> one of our favorites.

Ingredients for Pizza Bites

How to make pizza bites:

  1. Roll out the pizza dough into a rectangle (about 12″ by 16″).
  2. Place a small amount of sauce, cheese, and mini pepperoni in 25 (determine, first, how many you can fit and still have a bit of room between) portions. ONLY on one side of the rolled out dough.
  3. Fold the pizza dough over and cover the filling.
  4. Cut, with a pizza cutter, in between the filling portions. If desired, cut off any extra dough on the edges (I don’t usually because my family likes that part)
  5. Brush the top and all the sides with beaten egg.
  6. Bake at 400 degrees for 12-15 minutes or until golden brown.

How to freeze pizza bites:

Pizza bites are so easy to freeze and heat later. Simply let them cool and place them into a large freezer bag and place in the freezer. Take out and reheat as needed. Store them in the freezer for up to one month.

How to keep pizza bites crispy:

The egg wash provides that crispy, brown crust that you love on your pizza bites! Try something new and sprinkle the top (after the wash) with a bit of sea salt and garlic powder.

How to reheat frozen pizza bites:

These pizza bites reheat JUST LIKE your kids’ favorite frozen pizza treats. Simply spread on a pan and bake at 475 degrees for about 15 minutes or until hot. Done!
That, friends, is the beauty of these…your kids are already familiar with how to make them!

Tip: Serve these pizza bites an appetizer with your favorite marinara sauce. Up the ingredient game, a bit, if making these for adults. Try ham, cheddar, and spinach!

You can make them ahead and simply reheat them on game day or party day!

Pizza Bites variations & ideas:

  • diced ham, cheddar cheese, and chopped pineapple.
  • chopped chicken, diced jalapeno, pepper jack cheese.
  • crumbled sausage, diced onion.
  • scrambled egg, diced ham, white cheddar, & pesto.
  • give a wash of garlic butter & sprinkle of fresh basil on top.
  • instead of squares, try spreading a thin layer of filling across the rectangle and carefully rolling up the dough. Cut the dough into pinwheels and bake.

Easy and tasty…kids LOVE these homemade pizza bites that come together with only 5 ingredients. Bonus-they are great for freezing!

Ingredients
 

  • 1 loaf Rhodes frozen pizza dough, thawed to thaw simply set out the frozen dough on your counter 4 hours prior to when you want to make the bites.
  • 3/4 cup shredded Italian cheese
  • 1/4 cup pizza sauce
  • 1/3 bag mini pepperoni
  • 1 egg beaten

Instructions

  • Preheat the oven to 400 degrees
  • Thaw Rhodes pizza dough according to package instructions.
  • On a sprayed parchment paper, Roll the dough into a large rectangle roughly 12" by 16". Try to keep it fairly thin.
  • Drop fillings on to half of the dough rectangle according to the number of pizza bites you will be able to make. Be sure to leave a bit of room between each to cut them apart.
  • Fold the other half of the rectangle over the filling. Note, it is easiest to simply pick up the parchment paper and fold it over peeling the parchment paper away from the dough.
  • Cut apart the squares using a pizza cutter. Brush the top and in between the rows with the beaten egg.
  • Transfer the parchment paper onto a cookie sheet. Bake at 400degrees for 12-15 minutes or until golden brown.
  • To freeze, let cool and then place the bites into a large freezer bag. Freeze for up to 1 month. To reheat, preheat the oven to 475 degrees, bake for 15 minutes or until hot.

Notes

Note: 1 bag of shredded cheese, 1 jar of pizza sauce, and 1 bag of mini pepperoni will make the entire 3 loaves of Rhodes frozen pizza dough. Why not do them all and freeze leftovers?
