Rather than using dill pickle slices, like most fried pickles recipes use, I’m using dill pickle spears to ramp up the pickle flavor and create a crave-able and shareable appetizer.

    Key Ingredients:

    • dill pickle spears
    • panko bread crumbs
    • grated Parmesan, optional
    • parsley, chopped
    • egg
    • vegetable oil to fry
    • optional, garlic powder and paprika.
    • dipping sauce.

    Instructions for the fried pickles:

    1. Pat pickle spears with a paper towel until dry.
    2. In a medium bowl, combine breadcrumbs and grated parmesan.
    3. In a small bowl, beat the egg.
    4. Coat dried pickles with flour mixture and dip in the egg and finally coat with breadcrumbs.
    5. Repeat this process for all.
    6. Heat about 1 inch of the veggie oil to 375 F in large skillet (medium-high heat).
    7. Fry them all until golden brown (about 3 minutes), placing cooked ones on a paper towel in a single layer to drain off the excess oil until the next batch is done.
    8. For the dipping sauce, mix the ingredients together and dip, baby, dip!!

    Tips:

    • Letting the pickle spears dry off is essential or you’ll have batter sliding all around on you. Be sure to pat the spears dry before you start.
    • Don’t be tempted to overcrowd your pan. Leave room around each spear to get a good fry.
    • If you find your dipping sauce is thicker than you would like, add a bit of milk or cream to thin it out.
    • Be sure to flip your pickles half way through if they are not fully submerged in hot oil.
    • A thermometer to check the temperature of your oil is very very helpful. If you don’t have one, try to keep your pickles sizzling at a steady rate. You don’t want them to be sitting quietly in the oil (getting soggy) or the oil to be sizzling at a high rate (burning).

This yummy snack satisfies that need for a salty & carby bite. They are much easier to make then you might think (truly!!) and your family will gobble them up in record speed. Which…should I even say that?

For real, give this recipe a try. You’ll be glad you did!
