Air Fryer Ground Beef Wellington

I took my super popular Ground Beef Wellington recipe and adapted it for the Air Fryer. Same great taste, just as easy (easier!) to make, but now you can use your Air Fryer and skip the oven. This easy recipe is perfect for a family dinner, a small party, or a special dinner for two.

Puff pastry is wrapped around a delicious combo of seasoned ground beef, delicious mushrooms & onion, and fresh mozzarella for an utterly delicious bite. If you haven’t yet tried this recipe, you must do so soon. In fact, why not tonight?

Ground Beef Wellington made in the Air Fryer

Key Ingredients:

  • Eggs. Eggs act as the binder for the meat. Use large, good quality eggs.
  • Ground beef. I like to use a fairly lean ground beef to reduce how much potential grease might make its way on to my puff pastry. Ground turkey can work but add in a teaspoon of olive oil to account for the lack of fat.
  • Crushed saltine crackers or bread crumbs. The eggs and the bread crumbs work together to give you a great bind in your meat. When you cut into your pastry your meat won’t crumble apart.
  • Parsley and basil. I always prefer to use fresh herbs wherever possible and I definitely suggest using fresh. However, dried herbs work fine for this recipe.
  • Butter. Good, old-fashioned butter can’t be beat for the foundation of the mushroom and onion mixture. Always use unsalted, unless a recipe specifically calls for salted.
  • Onion. Any kind of onion works fine but I tend to prefer the red onions and usually buy those when sourcing ingredients for this recipe.
  • Garlic cloves, minced. This is one place where I don’ t think dry should be subbed for fresh. Use fresh minced garlic for the best flavor.
  • Baby bella mushrooms. Go ahead and sub out another kind of mushroom, if you prefer. Just keep them chopped fairly small so they will tuck into the puff pastry nicely.
  • Red wine. If you don’t want to use an alcohol, go for a grape juice. But that would be a total shame because the red wine adds so much flavor. Use whatever kind you want to have around for drinking. I usually have a Pinot Noir or Cab on hand.
  • Mozzarella cheese ( optional). Sometimes I add in the cheese, sometimes I skip it. If you DO choose to use cheese I highly recommend use use fresh mozzarella because of the soft texture. Or, shredded cheese. If you try to wrap a puff pastry around a slice of harder cheese you may find it ripping.
  • Puff pastry. Many readers successfully use crescent rolls for this recipe. Absolutely do so if you have them on hand. If you are shopping specifically for this recipe…get the puff pastry. The flaky, buttery texture of the pastry really is better! And if, by chance, you make this for a dinner party or gathering (which I hope you do!), then absolutely don’t skimp…do the puff pastry.

How to Make Air Fryer Ground Beef Wellington:

  • Heat Air Fryer to 375 degrees.
  • Mix the first 6 ingredients together well. Set aside.
  • In a large saucepan melt the butter and add the onion and mushrooms. Cook until mushrooms sweat and onions are translucent.
  • Add the garlic, red wine, and basil. Cook until reduced. Cool.
  • On a floured sheet, cut each puff pastry sheet into 4 squares.
  • Spread mushroom mixture across each square. Top with thin layer of (optional) mozzarella cheese
  • Put meat mixture (formed into flattened balls) on top.
  • Pull corners up over meat and pinch edges together.
  • Cut small slits on top (not all the way through!!) and brush the tops with cream or beaten egg (optional).
  • Bake, seam sides down, until golden brown and meat is cooked through.

Store/Make Ahead/Reheat

You can make these Wellington’s in advance. But only for about 12-24 hours. Make up the wellingtons without the final egg wash and put them into the fridge as soon as they are finished. Baste them and cook them while fully cold. Add an additional 10-15 minutes to the time, to account for the extra chilly temperature they are when they go in (watch it!). Alternately, have the meat mixture made up and ready to simply wrap and bake.

These store well in the fridge for a couple of days. Reheat them for 20 minutes in the Air Fryer at about 350 degrees. If you use the microwave they will be soggy.

What to serve with Air Fryer Ground Beef Wellington?

Usually I serve it up with mashed potatoes or perfect mashed cauliflower, glazed carrots, and a simple salad. It seems so fancy, doesn’t it!

Equipment

We use a simple but fantastic little air fryer. Love this one!

Ingredients
 

  • 2 eggs beaten
  • 1 1/2 pounds ground beef
  • 4 tablespoons saltine crackers or bread crumbs, crushed
  • 2 tablespoons dried parsley fresh works best, if you have it!
  • 1 teaspoon salt
  • 1 tablespoon cream milk works fine, as well.
  • 3 tablespoons butter
  • 1 small onion chopped fine
  • 4 cloves garlic minced
  • 8 ounces baby bella mushrooms
  • 1/2 cup red wine or grape juice
  • 1 teaspoon basil fresh works best, if you can.
  • mozzarella cheese optional
  • 2 sheets puff pastry thaw out according to the pkg
  • salt and pepper, to taste.

Instructions

  • Heat Air Fryer to 375 degrees.

  • Cook on medium high heat until mushrooms sweat and onions are translucent.
  • Turn the heat down to medium while you add the garlic, red wine, and basil.
  • Turn the heat back up to high and continue to cook until the liquid is reduced. Remove from heat. Cool.
  • On a lightly floured surface lay out the pastry sheets. Cut each sheet into 4 squares
  • Spread mushroom mixture across each square. Top with thin layer of mozzarella cheese
  • Put 1/2 cup of meat mixture (formed into flattened balls) on top.
  • Pull corners up over meat and pinch edges together. (don’t worry if this is tricky, it is for everyone…it isn’t just you!)
  • Cut small slits on top (not all the way through!!) and brush the tops with cream or beaten egg. If you have cut all the way through the pastry use this opportunity to seal it back up. Or, optional, skip scoring the top.
  • Bake, seam sides down, for about 30 minutes or until golden brown and meat is cooked through. Be sure to check it at about 20 minutes.

Notes

(I like to add 1/2 cup of red wine to the gravy, it adds so much to the flavor of this recipe!)

  2. This is absolutely for the airfryer. I do recommend checking them after 20 minutes (sooner if you feel more comfy) But I’ve found they need about 30 minutes every time I’ve made this recipe.

  3. I’m excited to try this but confused about the instructions to bake instead of air fry. I have a Ninja Foodi so it can do both. I wanted to verify since I thought this was an air fryer recipe and 30 minutes seems like too much time for the air fryer. Thanks.

  4. I don’t have a Air fryer. Can you do it in the oven? If so at what temperature & how long do you cook it for?
