Baked Red Velvet Donuts with Cream Cheese Frosting

Levi’s 15th birthday was this past week and when I asked him what kind of cake he wanted for his birthday he said “donuts, I want donuts”. What?!?

I should have known. This is the kid that had a cake for his 6th birthday made up of Krispy Kreme doughnuts piled high with a candle on top. <– I looked and looked for a photo to show you all but gosh, I can’t find it. This was back before we used an Iphone for everything :). Yes, I AM that old.

This past birthday week -yes, we are HUGE birthday freaks around here!- we made up 3 batches of donuts. Katie made these Red Velvet donuts with Cream Cheese frosting and I made 2 batches of my baked Yogurt Donuts with Blueberry Icing.

Levi was in donut heaven. I can’t believe this kid is 15, now. They say time goes fast but, gosh darn, it’s soooo true!

Katie made these donuts in no time. They are so easy to make and absolutely delicious! Soft, moist, and slightly sweet…they are a sweeter sort of donut rather than a traditional baked donut.

Pair this donut with the cream cheese frosting (which takes zero time to whip up!) for a sweet and easy weekend breakfast treat. Or, like in our case, a birthday boy’s treat.

Baked Red Velvet Donuts with Cream Cheese Frosting

A sweet, moist cake donut with a delicious cream cheese frosting!

Ingredients
 

For the donuts

  • 2 cups all purpose flour
  • 1/4 cup cocoa
  • 1 cup dark brown sugar
  • 1 teaspoon salt
  • 2 teaspoons baking powder
  • 1 cup buttermilk
  • 5 tablespoons butter, melted
  • 2 teaspoons vanilla extract
  • 2 large eggs, at room temperature
  • 4 teaspoons red food coloring

For the cream cheese frosting

  • 6 ounces cream cheese, softened
  • 6 tablespoons unsalted butter, softened
  • 2 teaspoons vanilla extract
  • 4 cups powdered sugar
  • 1/4 cup milk

Instructions

For the red velvet donuts

  • Preheat oven to 350 degrees F. Generously grease a doughnut pan and set aside.
  • In a large bowl whisk together the dry ingredients. In a separate bowl whisk together the buttermilk, melted butter, vanilla, and egg. Gently fold the wet mixture into the dry mixture - don't over mix! Fold in red food coloring and stir until combined.
  • Spoon mixture into prepared doughnut pan, and bake for 10 minutes, or until the doughnuts spring back when lightly pressed. Allow doughnuts to cool a few minutes in the pan before transferring to a wire rack to cool for a few more minutes.

For the cream cheese frosting

  • In a large bowl using an electric handheld mixer, beat the cream cheese, butter, and vanilla extract on medium-high speed until completely smooth. Reduce the speed to low and gradually add the sifted confectioners' sugar. Add the milk. Once the milk is combined beat frosting on high-speed for 1-2 minutes.
  • Spread frosting on cooled donuts.
