Oh my gosh guys, this pineapple cake! Like seriously, you guys. This is the cake you’ll be making ALL THE TIME and wonder how you lived without this homemade cake recipe. So freaking flavorful, freaky easy (seriously…one-bowl!), and the cream cheese frosting gets put on the warm cake… on purpose! So you basically bake the cake, frost it when it comes out, and serve. Good luck having any leftovers.
As always, we can’t bake a cake this tasty without telling you how important it is to have good quality ingredients. Bob’s Red Mill flour is the best. We use it for all our baking and think you should too!
I’ve been eating this cake forever! It’s an old-fashioned favorite showing up at potlucks and family events for decades.
Many years ago, when we lived in northern WI, I had the pleasure of spending quite a bit of time with a dear older lady from our church. We would often take the youth group to her home for the dessert part of the progressive dinner (does anyone know what that is?). This is the cake she served many of those times.
Side note, I think about these older ladies and my own grandma when I head to the grocery store. Can you imagine the awe on their faces when they walked down just the baking aisle and looked at all the amazing flours, sugars, and specialty baking ingredients Bob’s Red Mill carries. You GUYS, I LOVE the access I have to amazing ingredients. Ingredients our grandparents wouldn’t have even dreamed of.

It was always so moist, full of flavor, and an all-time favorite even with picky teenagers. Friends, teenagers eating every single thing on their plate without whining is the highest praise a recipe can get! This cake was a huge success every time.
One of the last times we had the honor of heading the dear lady’s home for dessert I asked her for this cake recipe. She grinned and went to write it out. I miss the days of hand-written recipes being passed about!
Oh my gosh! I was so shocked at how simple it was, how easy the ingredients were, and blessings of all blessings! I was supposed to put the frosting on a warm cake! Seriously you guys, I am the WORST at waiting for a cake to cool before frosting.
You know the cake recipe that you add pineapple juice to cake mix?
This cake uses one bowl, does not want a mixer involved, and uses pantry ingredients. You’ll love how easy it is and you’ll be telling all your friends to forget about that cake mix business and use THIS recipe. I mean, seriously. It’s almost as easy. For real.
You can’t feel the heat of the cake but, trust me, it’s warm. I’m spreading cream cheese frosting on warm pineapple cake. WWHATT!?!
And if only you could smell my house, right now. Sooooo good. This pineapple cake beats a candle, any day.
A good sprinkling of walnuts or pecans is the final, perfect touch for this flavorful cake. You could even go a bit nuts and add some chopped cherries, coconut, and pineapple on top.
Believe me when I say…it’s amazing! The tastiest and easiest pineapple cake EVER!
One Bowl Pineapple Cake
Ingredients
Cake Ingredients:
- 2 cups Bob's Red Mill All-Purpose Flour
- 1 1/2 cups sugar
- 2 eggs
- 1 teaspoon baking soda
- 1.5 teaspoons vanilla extract
- pinch of salt
- 20 oz can of crushed pineapple tidbits, with juice
Frosting Ingredients:
- 1 8 oz pkg cream cheese softened
- 1 stick butter softened
- pinch of salt
- 1-2 cups of powdered sugar start with 1 and add until you get your desired consistency and sweetness
Instructions
- Preheat the oven to 350 degrees.
- Grease a 9 by 13 cake pan
- In a large bowl, add the Bob's Red Mill flour, sugar, baking soda, and pinch salt.
- All at once add the eggs, vanilla, and pineapple.
- Using a fork, stir the dough until mixed (don't overmix).
- Pour the batter into the prepared pan.
- Bake for 35-40 minutes (check at the 30 mark) until golden brown and crackled on top.
- Cool for 5-10 minutes and then frost!
Frosting
- Beat together the butter and cream cheese until creamy.
- Add the pinch of salt and then the powdered sugar, a bit at a time.
- Spread the frosting on the warm cake.
- Top with chopped nuts. Serve.
