This Rhubarb Margarita is true to Minnesota with the use of rhubarb. Rhubarb is plentiful in the early summer of Minnesota. Frankly, it’s plentiful most of the summer. And plentiful is an understatement…people are begging you to take this stuff off their hands!

What is rhubarb?

Alright, let’s talk rhubarb! This funky-looking veggie (yep, it’s a veggie, not a fruit) boasts long, pinkish stalks that are tart and tangy, with a hint of sweetness. It’s like a flavor party in your mouth!

Rhubarb is typically in season during the spring and early summer months, making it a special treat to look forward to. Its unique flavor shines in pies, crumbles, and jams, adding a zingy and lip-smacking element that’ll have you coming back for seconds. Trust me, once you taste a rhubarb dessert or spread it on your morning toast, you’ll be hooked!

Rhubarb tends to be most abundant in regions with cooler climates, like here in MN. Places like the Midwest, Northeast, and Pacific Northwest are known for their plentiful rhubarb harvests. So if you, like me, are in those areas, you’re in luck! Time to get your hands on some juicy rhubarb and enjoy its tangy goodness to the fullest.

This margarita is made from rhubarb simple syrup, lime juice, and tequila. Oh…and ice, of course. Be warned…you’ll be day drinking and morning drinking and night drinking after you try this. So good!

Key Ingredients for Rhubarb Margaritas:

  • Rhubarb. Fresh or frozen works great.
  • Sugar.
  • Tequila. Use a silver variety.
  • Triple Sec or Orange Liquor.
  • Lime. I prefer to use fresh lime but have no problem reaching for the bottled version.
  • Ice. To shake up your ingredients.

How to Make Rhubarb simple syrup:

  1. Make your simple syrup by simmering the sugar & water on the stove until the sugar is dissolved.
  2. Stir in your rhubarb and bring it to a low boil.
  3. Shut the heat off and leave the rhubarb covered for 20 minutes.
  4. Strain the syrup off and chill it for your margaritas.
  5. BTW…save the rhubarb for our Puff Pastry Rhubarb Tartlets!

How to make the Rhubarb Margaritas:

There is nothing quite like the feeling of shaking up your cocktail after a long week. Friday nights were made for cocktail shakers!

  1. Fill a cocktail shaker with ice.
  2. Add the tequila, triple sec, rhubarb simple syrup, and lime juice.
  3. Shake well for 3 minutes or until it is very cold.
  4. Pour the margarita (including the ice is totally up to you…I like to) into a glass rimmed with sugar and enjoy!

  • Ginger: Incorporate a hint of ginger for a subtle, spicy kick.

Ingredients
 

Rhubarb Simple Syrup (makes enough for roughly 16 margaritas)

  • 2 cups granulated sugar
  • 2 cups water
  • 1 teaspoon vanilla extract
  • 1 medium lemon, juice and zest about 1/2 tablespoon zest and 3 tablespoons lemon, about–it doesn't have to be exact
  • 1 1/2 pounds rhubarb , roughly chopped
  • juice of half the lemon

Rhubarb Margaritas

  • 1/2 ounce lime juice
  • 1 ounce silver Tequila
  • 1 ounce Triple Sec
  • 2 ounces Rhubarb Simple Syrup

Instructions

Rhubarb Simple Syrup

  • Bring the 2 cups of sugar and 2 cups of water to a gentle boil until the sugar is dissolved.
  • Add the lemon, vanilla, and rhubarb and bring back to a gentle boil.
  • Cover and remove from heat for 20 minutes.
  • Drain the juice and cool for margarita's!
  • Make Puff Pastry Rhubarb Tartlets with the rhubarb :).

Rhubarb Margaritas

  • Fill a cocktail shaker with ice.
  • Add Tequila, Triple Sec, lime juice, and rhubarb simple syrup.
  • Shake for 3-5 minutes until very cold.
  • Pour the margarita into a margarita glass lined with sugar.

Note: Make up a batch of rhubarb simple syrup and swap it for the simple syrup in my homemade margarita mix. So good!
