The ingredients for this cake are simple and easily accessible. Feel free to sub out granulated sugar for the coconut sugar, if you prefer. We like the consistency coconut sugar gives to this cake, though!
What kind of pear should I use in this Gluten-free Pear Cake?
These are trout pears that I’ve used, here. But Bartlett, Bosc, and Anjou pears are great options and easily found at your local grocery store.
Using a sieve for your dry ingredients when working with a gluten-free flour keeps the texture of your cake light and fluffy. Gluten-free desserts often become dense and crumbly in texture. Using a sieve helps with that problem.
Tip: If you don’t have a sieve, whisk your flours before measuring to aerate them and give you the same result as the sieve would.
Eggs and milk, how easy is that? Although it might be tempting to do with a dairy-free milk option, try to avoid it if you can. The gluten-free recipes often need the high fat content in real milk. If you DO want to try going dairy-free I would suggest almond, soy, or cashew milk as your substitutes to try because of their thickness and protein contents.
Gently stir the whole thing up just until it is nice and smooth and the graininess is pretty much gone.

Spiced Gluten-free Pear Cake
Ingredients
- ½ cup – Brown rice flour
- ½ cup – Almond flour
- ¼ cup – Tapioca flour
- ¼ cup – Corn flour
- ¾ cup – Coconut Sugar
- 1 tsp – Baking powder
- ½ tsp – Baking soda
- ¼ tsp – Salt
- ½ tsp – Xantham gum
- 1 tsp – Cinnamon
- ½ tsp – Ground ginger
- 3 – Eggs
- ½ cup – Milk
- 3 – Pears
Instructions
- – Place all the flours, baking powder, baking soda, cinnamon, ginger, xantham gum, and salt in a sieve and shift to combine everything.
- – Now place all the remaining ingredients except the pears in a bowl and whisk until everything is evenly combined.
- – Add the dry ingredients into the wet and mix it with a spatula until everything is evenly combined and a smooth batter forms.
- – In a greased and lined pan, pour the batter.
- – Now place the peeled pears into the batter, leaving some gap between each pear.
- – Bake the cake in a preheated oven at 350 degrees (180degrees Celsius) for about 40-50 minutes until a skewer inserted in the middle of the cake comes out clean.
- – Let the cake cool slightly, drizzle some fresh cream and serve!
