Velvetta Dip served up with tortilla chips

There isn’t a more classic party dip recipe then the old-school Velvetta and Ro-Tel recipe, is there? Cucumber Dill and Hot Walleye are runners-up to this cheesy dip.

Always a favorite. And Velvetta is the key ingredient.

I have tried using mixes of other cheese or ingredients in this recipe to eliminate the need for Velvetta.

It never tastes as good. Or is as easy.

What is the shelf life of Velveeta?

That’s the thing, Velevetta is a processed cheese which means it has quite a long shelf life. About 6 months. Which also means that you can grab some, stick it in your pantry, and know it will be available when you need it.

Ingredients for Queso Dip in the slow cooker. Ro-tel, Velvetta, Cream Cheese

The slow-cooker makes quick work of this dip. Simply dice up the cheeses, add the tomatoes, herbs, and sausage and you are done! Go ahead and leave it there while you get ready for the party.

Perfect dip for entertaining or hosting a party!

Ground sausage cooked in a skillet.

I love to add ground hot sausage to this dip to spice up the flavor and texture. The spicier the better!

Try using ground beef, ground pork, or my favorite…hot Italian sausage.

Creamy, cheesy, Velvetta and Ro-tel Dip in a bowl ready to be eaten.

Serve this cheesy, spicy dip with tortilla chips, pretzels, or crusty bread…all are amazing! Try bell peppers, cauliflower, and zucchini for a gluten-free alternative :).

Can you freeze dip made with Velveeta cheese?

Technically, with the right ingredients and circumstances I suppose you can. But, I’ve never had luck with it. The texture gets a bit grainy as the cheese seems to separate out. Keep any leftovers in the fridge for a couple days. If you have any leftovers :).

Deciding what to serve this dip with will be the hardest part of the whole recipe!
