What is the shelf life of Velveeta?
That’s the thing, Velevetta is a processed cheese which means it has quite a long shelf life. About 6 months. Which also means that you can grab some, stick it in your pantry, and know it will be available when you need it.
The slow-cooker makes quick work of this dip. Simply dice up the cheeses, add the tomatoes, herbs, and sausage and you are done! Go ahead and leave it there while you get ready for the party.

I love to add ground hot sausage to this dip to spice up the flavor and texture. The spicier the better!
Try using ground beef, ground pork, or my favorite…hot Italian sausage.
Serve this cheesy, spicy dip with tortilla chips, pretzels, or crusty bread…all are amazing! Try bell peppers, cauliflower, and zucchini for a gluten-free alternative :).
Can you freeze dip made with Velveeta cheese?
Technically, with the right ingredients and circumstances I suppose you can. But, I’ve never had luck with it. The texture gets a bit grainy as the cheese seems to separate out. Keep any leftovers in the fridge for a couple days. If you have any leftovers :).
Deciding what to serve this dip with will be the hardest part of the whole recipe!

- 20 oz Rotel Diced Tomatoes with Green Chilies (2 10oz cans)
- 32 oz Velveeta cheese
- 8 oz cream cheese
- 1 bunch fresh cilantro stems removed and finely chopped
- 1 pound pork sausage, browned and drained well
Instructions
- Place all ingredients in a slow cooker.
- Cover and cook on low for 1 to 2 hours or until melted.
- Stir until well blended.
- Serve with corn chips, tortilla chips, or assorted vegetable dippers. Can also spoon over nachos and tacos
